Double Layer Birthday Cake

3 cups cake flour
1.75 cups sugar
1.25 cups water
.5 cup shortening
3T water, 3T oil, 2tsp baking powder (mixed together)
2.5 tsp baking powder
1 tsp salt
1.5 tsp vanilla extract

Preheat oven to 350 degrees.  Grease & flour two cake
pans.  In large bowl, combine all ingredients.
Using electric mixer, beat until well mixed, about
4 minutes.  Pour batter into cake pans.  Bake
for 40-45 minutes, until cake tester inserted in center
comes out clean.  Cool in pans 10 minutes before removing
to wire racks.  Frost when completely cooled.
